Will I lose quality?
Not with "Fastest": the video and audio are copied into an MP4 container as they are. Only "Most compatible" re-encodes, when the source is not already H.264.
My iPhone video is HEVC. Will the MP4 play on Windows?
HEVC in MP4 plays on most recent devices, but some Windows PCs need an extension for it. Choose "Most compatible" to re-encode to H.264, which plays everywhere (needs a browser that can encode H.264, such as Chrome or Edge).
What is the difference between MOV and MP4?
Both come from the same QuickTime design and can hold the same codecs. MP4 is the open standard that more apps, websites and TVs accept.
